According to the San Bernardino County municipal code 13.32 any restaurant or food service business that operates a commercial kitchen, therefore produces fats, oils, and grease (FOG) as by-product are obligated to install a grease trap in their establishment. The code of fog control regulation also states that a grease trap must be pumped out as often as necessary to maintain the operating efficiency of the unit. Ignoring these regulations can result in legal citations imposed by the local municipality, leading to potential fines and even revocation of the business license (temporary/permanent) of the food service establishment.
